Mr. Lucas Spoel Named as New Chef of Table 34

Mr. Lucas Spoel, new chef of Grand InterContinental Seoul

Grand InterContinental Seoul is pleased to announce the appointment of Mr. Lucas Spoel to the position of chef at the hotel's contemporary restaurant Table 34.

Mr. Spoel brings to Table 34 a wide range of experience in an equally wide range of countries from not only The Netherlands but also Italy, France, Germany, the United States, New Zealand and Australia in hotels such as the Hyatt Regency Sanctuary Cove, Alpha Resorts, and Sheraton Mirage Resort & Spa.

It was at the suggestion of his elder brother, who was a chef, that Mr. Spoel began his study of cooking and in the time since has amassed a 27-year career.

Mr. Spoel prefers simple dishes in which the flavor of the ingredients is highlighted as opposed to complicated and fancy cuisine.

Chef Lucas has created a memorable menu featuring avocado tartare, seared tuna, sesame and garlic aioli; truffle scented risotto of wild mushrooms, poached egg, shaved parmesan; or sweet corn and basil soup, scallop cannelloni.

You may also choose a medley of scallop, squid, lobster and sea bass, grilled vegetables, vermouth sauce; rack of mandalong lamb, braised root vegetables, green pepper corn sauce; and more.

Mr. Spoel believes that the atmosphere in the kitchen must be pleasant for delicious food to be created so he works hard to maintain an atmosphere that is enjoyable. He notes that it is important to think of others first. (02) 559-7631
